- 4 cups mixed greens
- 1 cup shredded carrots
- 1 cup sliced cucumbers
- 1/2 cup red bell pepper, sliced
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup sesame seeds
- 1/4 cup gluten-free soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey or agave syrup
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- In a large bowl, combine the mixed greens, shredded carrots, sliced cucumbers, red bell pepper, green onions, and cilantro.
- In a separate bowl, whisk together the gluten-free soy sauce, rice vinegar, honey or agave syrup, sesame oil, and grated ginger to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Sprinkle sesame seeds on top before serving.
