A delicious and refreshing gluten-free chopped salad inspired by Ruth’s Chris.

Ingredients

  • 1 head of romaine lettuce, chopped
  • 1 cup of cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup of crumbled feta cheese
  • 1/2 cup of black olives, sliced
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of red wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, feta cheese, black olives, and parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or refrigerate for up to an hour before serving.
