Ingredients

  • 2 large sweet potatoes
  • 1/4 cup honey
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and slice the sweet potatoes into 1/2 inch rounds.
  3. In a bowl, toss the sweet potato rounds with olive oil, salt, and pepper.
  4. Arrange the sweet potato rounds on a baking sheet in a single layer.
