A delicious and healthy side dish featuring roasted carrots topped with creamy whipped ricotta and a drizzle of hot honey.

Ingredients

  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • 1 teaspoon red pepper flakes

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss the carrot sticks with olive oil, salt, and pepper.
  3. Spread the carrots on a baking sheet in a single layer.
  4. Roast in the oven for 25-30 minutes, or until tender and caramelized.
  5. While the carrots are roasting, whip the ricotta cheese until smooth.
  6. In a small saucepan, heat the honey and stir in the red pepper flakes.
  7. Once the carrots are done, remove them from the oven and let cool slightly.
  8. Serve the roasted carrots topped with whipped ricotta and drizzled with hot honey.

Notes

  • For extra flavor, add herbs like thyme or rosemary to the carrots before roasting.
