Deliciously soft and chewy gluten-free red velvet cookies filled with Nutella.

Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1/2 cup Nutella

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Add the egg, vanilla extract, and red food coloring to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Fold in the Nutella until evenly distributed.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are set.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
