- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the gluten-free flour, sugar, cocoa powder, baking soda, and salt.
- In another bowl, cream the softened butter until smooth.
- Add the egg, red food coloring, and vanilla extract to the butter and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If using, fold in the white chocolate chips.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are set.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
