Deliciously soft and chewy gluten-free red velvet cookies with a cookies and cream twist.

Ingredients

  • 1 ½ cups gluten-free all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ½ cup unsalted butter, softened
  • 1 tablespoon red food coloring
  • 1 cup crushed cookies (gluten-free)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg, vanilla extract, and red food coloring, mixing until well combined.
  4. In another bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the crushed gluten-free cookies.
  7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
