A delicious and healthy alternative to traditional ravioli, made with gluten-free ingredients and filled with fresh, flavorful fillings.

Ingredients

  • 2 cups gluten-free flour
  • 3 large eggs
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup spinach, chopped
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. In a large bowl, mix the gluten-free flour and salt.
  2. Make a well in the center and add the eggs and olive oil.
  3. Mix until a dough forms, then knead for a few minutes until smooth.
  4. Wrap the dough in plastic wrap and let it rest for 30 minutes.
  5. In another bowl, combine ricotta, Parmesan, basil, spinach, black pepper, and nutmeg to make the filling.
  6. Roll out the dough on a floured surface until thin.
  7. Cut into squares and place a spoonful of filling in the center of each square.
  8. Fold the dough over to create a triangle and seal the edges.
  9. Bring a pot of salted water to a boil and cook the ravioli for 3-4 minutes until they float.
  10. Serve with your favorite sauce.
