  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a mixing bowl, combine almond flour, coconut flour, and powdered sugar.
  3. Add melted butter and mix until crumbly.
  4. Press the mixture into the bottom of the prepared baking dish to form the crust.
  5. Bake the crust for 15 minutes or until lightly golden.
  6. In another bowl, whisk together eggs, granulated sugar, lemon juice, and lemon zest.
  7. Gently fold in the raspberries.
  8. Pour the lemon-raspberry mixture over the baked crust.
  9. Bake for an additional 20-25 minutes until set.
  10. Allow to cool completely before slicing into bars.
