Delicious gluten-free cookies filled with raspberry and flavored with almond, perfect for holiday celebrations.

  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/4 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, powdered sugar, softened butter, almond extract, and salt. Mix until a dough forms.
  3. Take a small amount of dough and flatten it in your palm.
  4. Place a small teaspoon of raspberry jam in the center and fold the dough around it to form a ball.
  5. Place the cookies on a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes or until the edges are lightly golden.
  7. Let the cookies cool, then dust with powdered sugar before serving.
