  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix together the pumpkin puree, sugars, and vegetable oil.
  3. Add the eggs and vanilla extract, and mix until well combined.
  4. In another bowl, whisk together the gluten-free flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before cutting into squares and serving.
