  • 1/2 cup brown sugar
  • 1/4 cup melted coconut oil
  • 1 can (15 oz) pumpkin puree
  • 1/2 cup maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix the gluten-free flour, brown sugar, and melted coconut oil until crumbly.
  3. Press the mixture into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, combine the pumpkin puree, maple syrup, eggs, vanilla extract, pumpkin pie spice, and salt. Mix until smooth.
  5. Pour the pumpkin mixture over the crust in the baking dish.
  6. Bake for 25-30 minutes or until the center is set.
  7. Allow to cool before cutting into bars.
