Gluten-Free Pumpkin Pie Bars

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup melted butter
  • 1/2 teaspoon salt
  • 1 can (15 oz) pumpkin puree
  • 1 cup coconut milk
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix gluten-free flour, brown sugar, melted butter, and salt until crumbly.
  3. Press the mixture into the bottom of a greased baking dish.
  4. Bake for 10 minutes, then remove from the oven.
  5. In another bowl, combine pumpkin puree, coconut milk, sugar, eggs, vanilla, cinnamon, nutmeg, and ginger.
  6. Pour the pumpkin mixture over the baked crust.
  7. Bake for an additional 30-35 minutes, or until set.
  8. Let cool before cutting into bars.

Notes

  • Store leftovers in the refrigerator for up to 5 days.
  • These bars can be served warm or chilled.
  • Top with whipped cream for extra flavor.
