- 2 cups gluten free all-purpose flour
- 1 cup mashed potatoes
- 1/4 cup sugar
- 1/2 cup milk (or dairy-free alternative)
- 1/4 cup butter (or dairy-free alternative), melted
- 2 large eggs
- 1 packet (2 1/4 tsp) instant yeast
- 1 tsp salt
- In a large bowl, combine the gluten free flour, sugar, and salt.
- In a separate bowl, mix the mashed potatoes, melted butter, milk, and eggs until well combined.
- Add the wet ingredients to the dry ingredients and mix until a dough forms.
- Stir in the instant yeast and mix until fully incorporated.
- Cover the bowl with a clean cloth and let the dough rise in a warm place for about 1 hour.
- Preheat the oven to 375°F (190°C).
- Shape the dough into buns and place them on a baking sheet lined with parchment paper.
- Let the buns rise for another 30 minutes.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Allow to cool before serving.
