- 2 cups gluten-free all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup cold water
- 1/2 cup fruit jam or spread of choice
- 1 egg, beaten (for egg wash)
- In a large bowl, mix the gluten-free flour, sugar, and salt.
- Add the chilled butter and mix until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 350°F (175°C).
- Roll out the dough on a floured surface and cut into rectangles.
- Place a spoonful of jam on half of the rectangles and top with the remaining rectangles.
- Seal the edges with a fork and brush the tops with beaten egg.
- Bake for 20-25 minutes or until golden brown.
- Let cool before serving.

- Feel free to experiment with different flavors of jam.
- Store leftovers in an airtight container for up to 3 days.
