Delicious homemade gluten-free pop tarts filled with your favorite jam or fruit spread.

Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup cold water
  • 1/2 cup fruit jam or spread of choice
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, mix the gluten-free flour, sugar, and salt.
  2. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add cold water, mixing until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  5. Preheat the oven to 350°F (175°C).
  6. Roll out the dough on a floured surface and cut into rectangles.
  7. Place a spoonful of jam on half of the rectangles and top with the remaining rectangles.
  8. Seal the edges with a fork and brush the tops with beaten egg.
  9. Bake for 20-25 minutes or until golden brown.
  10. Let cool before serving.

Notes

  • Feel free to experiment with different flavors of jam.
  • Store leftovers in an airtight container for up to 3 days.
