- 2 cups gluten-free all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup cold water
- 1/2 cup fruit jam or filling of choice
- 1 cup powdered sugar (for icing)
- 1–2 tablespoons milk (for icing)
- Sprinkles (optional)
- In a large bowl, mix the gluten-free flour, sugar, and salt.
- Add the chilled butter and mix until the mixture resembles coarse crumbs.
- Gradually add cold water until the dough comes together.
- Divide the dough into two equal parts and roll each out on a floured surface.
- Cut the dough into rectangles and place half on a baking sheet.
- Place a spoonful of jam in the center of each rectangle.
- Top with the remaining rectangles and seal the edges with a fork.
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until golden brown.
- Let cool before icing.
