  • 1/4 teaspoon salt

  • 1/2 cup fruit jam or filling of choice
  • 1 cup powdered sugar (for icing)
  • 12 tablespoons milk (for icing)
  • Sprinkles (optional)

Instructions

  1. In a large bowl, mix the gluten-free flour, sugar, and salt.
  2. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add cold water until the dough comes together.
  4. Divide the dough into two equal parts and roll each out on a floured surface.
  5. Cut the dough into rectangles and place half on a baking sheet.
  6. Place a spoonful of jam in the center of each rectangle.
  7. Top with the remaining rectangles and seal the edges with a fork.
  8. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until golden brown.
  9. Let cool before icing.
  10. For the icing, mix powdered sugar with milk until smooth and drizzle over the cooled pop tarts. Add sprinkles if desired.
