Gluten Free Pop Tarts | Authentic Taste

Delicious gluten-free pastries that capture the comforting flavors of traditional pop tarts, perfect for breakfast or a snack.

Ingredients

  • 2 1/4 cups all purpose gluten free flour blend
  • 1 teaspoon xanthan gum (omit if your blend already contains it)
  • 1/4 cup cornstarch
  • 1/4 teaspoon kosher salt
  • 3/4 cup granulated sugar
  • 8 tablespoons unsalted butter (melted and cooled)
  • 1 teaspoon pure vanilla extract
  • 1 egg (at room temperature, beaten)
  • 1/4 cup milk (at room temperature, plus more by the half-teaspoonful as needed)
  • 1/2 cup packed light brown sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1 cup confectioners’ sugar
  • 1/4 teaspoon ground cinnamon
  • 2 teaspoons lukewarm water (plus more by the half-teaspoonful as necessary)

Instructions

  1. Preheat your oven to 350°F. Line a large rimmed baking sheet with unbleached parchment paper and set it aside.
  2. Prepare the crust.
  3. Prepare filling/assemble pastries.
  4. Bake the pastries.
  5. Make the glaze/glaze the pastries.

Notes

Experiment with different fillings such as jams or chocolate spread. Store in an airtight container for up to one week in the fridge or freeze for up to three months.
