- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
- Add the sliced kielbasa to the skillet and cook until browned.
- In a greased casserole dish, layer half of the gluten-free pierogi, followed by half of the sauerkraut, the kielbasa mixture, and half of the cheese.
- Repeat the layers with the remaining ingredients.
- Cover the casserole with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
