A delicious and hearty gluten-free casserole featuring pierogi and kielbasa, perfect for a spring dinner.

Ingredients

  • 1 package gluten-free pierogi
  • 1 lb kielbasa, sliced
  • 2 cups sauerkraut, drained
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the sliced kielbasa to the skillet and cook until browned.
  4. In a greased casserole dish, layer half of the gluten-free pierogi, followed by half of the sauerkraut, the kielbasa mixture, and half of the cheese.
  5. Repeat the layers with the remaining ingredients.
  6. Cover the casserole with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.
