A refreshing and healthy chicken salad perfect for spring dinners, made with gluten-free pesto.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup gluten-free pesto
  • 1/2 cup Greek yogurt
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken and gluten-free pesto.
  2. Add the Greek yogurt and mix until well combined.
