Ingredients

  • 1 lb lamb or beef, cut into cubes
  • 1 large onion, grated
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper to taste
  • Skewers (soaked in water if wooden)

Instructions

  1. In a large bowl, combine the grated onion, minced garlic, olive oil, lemon juice, cumin, coriander, salt, and pepper.
  2. Add the meat cubes to the marinade and mix well to coat. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated meat onto the skewers.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until the meat is cooked to your desired doneness.
  6. Remove from the grill and let rest for a few minutes before serving.
