Delicious and rich gluten-free pecan pie cheesecake bars that combine the flavors of pecan pie and cheesecake in a perfect dessert.

  • 1 ½ cups gluten-free graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped
  • 1 cup corn syrup
  • ½ cup brown sugar
  • ¼ cup unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix gluten-free graham cracker crumbs, melted butter, and sugar until combined.
  3. Press the mixture into the bottom of a greased 9×13 inch baking dish.
  4. In a separate bowl, beat the cream cheese and sugar until smooth.
  5. Add eggs and vanilla extract, mixing until well combined.
  6. Pour the cream cheese mixture over the crust in the baking dish.
  7. In another bowl, combine chopped pecans, corn syrup, brown sugar, melted butter, and vanilla extract.
  8. Pour the pecan mixture over the cream cheese layer.
  9. Bake for 40-45 minutes or until set.
  10. Allow to cool before cutting into bars.

Notes

  • Store leftovers in the refrigerator for up to 5 days.
  • For a richer flavor, use dark brown sugar instead of light brown sugar.
  • Make sure all ingredients are gluten-free to maintain the integrity of the recipe.
