  • ½ cup creamy peanut butter
  • ½ cup granulated sugar (plus more for rolling)
  • ½ cup light brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1 ⅓ cups gluten-free all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream together the unsalted butter, peanut butter, granulated sugar, and light brown sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until smooth.
  4. In a separate bowl, whisk together the gluten-free flour, baking soda, and salt.
  5. Add the dry ingredients to the peanut butter mixture and blend until smooth, scraping the bowl as needed.
  6. Scoop 2 tablespoons of dough using a medium cookie scoop and roll into a ball. Roll the dough ball in granulated sugar and place on the prepared cookie sheet, pressing down with a fork to create a criss-cross pattern.
  7. Bake for 10–12 minutes until set and lightly golden around the edges.
  8. Cool on the pan for at least 5 minutes before transferring to a wire rack to cool completely.
