- Preheat the oven to 350°F (175°C).
- In a bowl, mix gluten-free oats, almond flour, brown sugar, melted coconut oil, vanilla extract, and salt until crumbly.
- Press half of the mixture into the bottom of a greased baking dish.
- In another bowl, beat the cream cheese with powdered sugar until smooth. Spread over the crust.
- Layer the sliced peaches on top of the cream cheese mixture.
- Sprinkle the remaining crumble mixture over the peaches.
- Bake for 30-35 minutes or until golden brown.
- Let cool before slicing into bars.
