Delicious and easy-to-make gluten-free dessert bars featuring fresh peaches and a creamy filling, perfect for spring.

Ingredients

  • 2 cups gluten-free oats
  • 1 cup almond flour
  • 1/2 cup brown sugar
  • 1/2 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 4 ripe peaches, peeled and sliced
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix gluten-free oats, almond flour, brown sugar, melted coconut oil, vanilla extract, and salt until crumbly.
  3. Press half of the mixture into the bottom of a greased baking dish.
  4. In another bowl, beat the cream cheese with powdered sugar until smooth. Spread over the crust.
  5. Layer the sliced peaches on top of the cream cheese mixture.
  6. Sprinkle the remaining crumble mixture over the peaches.
  7. Bake for 30-35 minutes or until golden brown.
  8. Let cool before slicing into bars.
