A delightful twist on traditional peach cobbler, these gluten-free cookies are perfect for summer desserts.

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup diced fresh peaches
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the gluten-free flour, rolled oats, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the diced peaches gently.
  7. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until the edges are golden brown.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
