A quick and flavorful gluten-free pasta dish perfect for spring.

Ingredients

  • 8 oz gluten-free spaghetti
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/4 cup black olives, sliced
  • 2 tbsp capers, rinsed
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the gluten-free spaghetti according to package instructions.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Stir in diced tomatoes, olives, capers, and red pepper flakes.
  5. Simmer for 5-7 minutes until heated through.
  6. Season with salt and pepper to taste.
  7. Drain the spaghetti and toss it with the sauce.
  8. Serve hot, garnished with fresh basil.
