A delicious and healthy meatloaf made with chicken and Parmesan cheese, perfect for gluten-free diets.

Ingredients

  • 1 lb ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup gluten-free breadcrumbs
  • 1/4 cup chopped parsley
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, Parmesan cheese, gluten-free breadcrumbs, parsley, onion, garlic, egg, salt, pepper, and Italian seasoning.
  3. Mix until well combined.
  4. Transfer the mixture to a loaf pan and shape it into a loaf.
  5. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Let it rest for 10 minutes before slicing and serving.

Notes
