- In a mixing bowl, combine the gluten-free pancake mix, milk, egg, and melted butter or coconut oil until smooth.
- Heat a non-stick skillet over medium heat and pour in a small amount of batter to form a pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Repeat with the remaining batter to make more pancakes.
- Once cooked, fill each pancake with fresh fruits and drizzle with maple syrup or honey.
- Fold the pancakes like tacos and serve warm.
