Delicious and healthy gluten-free oven-baked dumplings served with a flavorful peanut sauce, perfect for a spring meal.

Ingredients

  • 1 cup gluten-free flour
  • 1/2 cup water
  • 1 cup mixed vegetables (carrots, bell peppers, and cabbage)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lime juice
  • 1 clove garlic, minced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix gluten-free flour, water, salt, and pepper to form a dough.
  3. Roll out the dough and cut into circles.
  4. In a pan, sauté mixed vegetables in olive oil until tender.
  5. Place a spoonful of sautéed vegetables on each dough circle and fold to seal.
  6. Arrange dumplings on a baking sheet and bake for 20-25 minutes until golden.
  7. In a separate bowl, whisk together peanut butter, soy sauce, honey, lime juice, and garlic to make the peanut sauce.
  8. Serve dumplings warm with peanut sauce drizzled on top.
