- Preheat the oven to 375°F (190°C).
- In a bowl, mix gluten-free flour, water, salt, and pepper to form a dough.
- Roll out the dough and cut into circles.
- In a pan, sauté mixed vegetables in olive oil until tender.
- Place a spoonful of sautéed vegetables on each dough circle and fold to seal.
- Arrange dumplings on a baking sheet and bake for 20-25 minutes until golden.
- In a separate bowl, whisk together peanut butter, soy sauce, honey, lime juice, and garlic to make the peanut sauce.
- Serve dumplings warm with peanut sauce drizzled on top.
