- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the almond flour, coconut flour, baking soda, and salt.
- In another bowl, whisk together the melted coconut oil, honey (or maple syrup), egg, vanilla extract, and orange zest until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Fold in the dark chocolate chunks until evenly distributed.
- Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
