Delicious gluten-free cookies infused with the vibrant flavor of orange and rich dark chocolate chunks.

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup coconut oil, melted
  • 1/2 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • 1 cup dark chocolate chunks

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the almond flour, coconut flour, baking soda, and salt.
  3. In another bowl, whisk together the melted coconut oil, honey (or maple syrup), egg, vanilla extract, and orange zest until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  5. Fold in the dark chocolate chunks until evenly distributed.
  6. Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
