A delicious and creamy soup made with carrots and lentils, perfect for a comforting meal.

Ingredients

  • 1 cup red lentils
  • 4 cups vegetable broth
  • 2 cups carrots, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 1 cup coconut milk
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the chopped carrots and cook for a few minutes.
  3. Stir in the lentils, vegetable broth, cumin, turmeric, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until lentils are tender.
