- 4 cups vegetable broth
- 2 cups carrots, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- Salt and pepper to taste
- 1 cup coconut milk
- Fresh parsley for garnish
