Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add chicken thighs and cook until browned on all sides.
  4. Stir in bell peppers, paprika, thyme, salt, and pepper.
  5. Add rice and chicken broth, bring to a boil.
  6. Reduce heat, cover, and simmer for 20-25 minutes until rice is cooked.
  7. Fluff with a fork and serve hot.

Notes

  • For added flavor, marinate chicken in spices for a few hours before cooking.
  • Feel free to add vegetables like peas or carrots for extra nutrition.
