A delicious and easy one-pan meal featuring gluten-free tortellini, chicken, and fresh spring vegetables, all tossed in a flavorful pesto sauce.

Ingredients

  • 1 package gluten-free tortellini
  • 2 cups cooked chicken, diced
  • 1 cup asparagus, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pesto sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the asparagus and sauté for 3-4 minutes until tender.
  3. Stir in the cherry tomatoes and cooked chicken, cooking for an additional 2-3 minutes.
  4. Add the gluten-free tortellini and pesto sauce, stirring to combine.
  5. Cook for another 5 minutes, allowing the tortellini to heat through.
  6. Season with salt and pepper to taste.
  7. Serve warm and enjoy your meal!
