  • 1/2 cup almond flour
  • 1/2 cup coconut sugar
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup dairy-free cream cheese
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the gluten-free oats, almond flour, coconut sugar, baking soda, and salt.
  3. Add the honey, melted coconut oil, and vanilla extract to the dry ingredients and mix until well combined.
  4. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  5. Bake for 10-12 minutes or until the edges are golden brown.
  6. Let the cookies cool completely on a wire rack.
  7. In a separate bowl, beat together the dairy-free cream cheese and powdered sugar until smooth.
  8. Spread a generous amount of the cream cheese mixture on the flat side of one cookie and top with another cookie to make a sandwich.
  9. Repeat with the remaining cookies and filling.

Notes

  • Store in an airtight container for up to a week.
  • For a chocolate twist, add cocoa powder to the cream cheese filling.
