Gluten Free Oatmeal Cookies

A simple and healthy recipe for gluten free oatmeal cookies that are delicious and easy to make.

Ingredients

  • 2 cups gluten free oats
  • 1 cup almond flour
  • 1/2 cup coconut sugar
  • 1/2 cup honey or maple syrup
  • 1/2 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the gluten free oats, almond flour, coconut sugar, baking soda, and salt.
  3. In another bowl, combine the melted coconut oil, honey (or maple syrup), and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. If using, fold in the chocolate chips.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Store cookies in an airtight container for up to a week.
  • For a nut-free version, substitute almond flour with oat flour.
  • Feel free to add nuts or dried fruits for extra flavor.
