Delicious and -to-make gluten-free no-bake cookies that satisfy your sweet tooth without the need for baking.

Ingredients

  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chocolate chips (optional)

Instructions

  1. In a mixing bowl, combine the gluten-free oats, almond butter, honey or maple syrup, cocoa powder, and vanilla extract.
  2. Mix until all ingredients are well combined.
  3. If desired, fold in chocolate chips.
  4. Using your hands, form the mixture into small balls or flatten into cookie shapes.
  5. Place the cookies on a parchment-lined baking sheet.
  6. Refrigerate for at least 30 minutes to set.
