  • 2 cups sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup almond milk or other non-dairy milk
  • 1 teaspoon vanilla extract

Instructions

  1. Line baking sheets with wax paper to prevent sticking and make cleanup easy.
  2. Combine sugar, cocoa, non-dairy butter, and almond milk in a saucepan. Heat over medium heat, stirring until it reaches a full boil. Boil for 1 minute without stirring.
  3. Remove from heat and quickly stir in peanut butter, oats, and vanilla extract until well combined.
  4. Drop spoonfuls of the mixture onto wax paper and let them cool at room temperature for 30 minutes or until firm.
