A delicious and comforting gluten-free casserole featuring chicken and a creamy sauce, inspired by the famous Neiman Marcus recipe.

Ingredients

  • 4 cups cooked chicken, shredded
  • 1 cup gluten-free cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup butter, melted
  • 1/2 cup chopped green onions
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, gluten-free cream of chicken soup, sour cream, cheddar cheese, green onions, garlic powder, salt, and pepper.
  3. Transfer the mixture to a greased 9×13 inch baking dish.
  4. In a separate bowl, mix the gluten-free breadcrumbs with melted butter until well combined.
  5. Sprinkle the breadcrumb mixture evenly over the chicken mixture in the baking dish.
  6. Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
  7. Let it cool for a few minutes before serving.

Notes

  • For a spicier version, add diced jalapeños to the chicken mixture.
  • Can substitute cooked turkey for chicken if desired.
  • Make sure all ingredients are certified gluten-free.
