Gluten Free Monster Cookies

These gluten free monster cookies are a delightful treat, packed with oats, chocolate chips, and peanut butter, making them chewy and delicious.

Ingredients

  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 2 cups gluten free oats
  • 1 cup chocolate chips
  • 1/2 cup M&M’s (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the peanut butter, brown sugar, and granulated sugar until smooth.
  3. Add the eggs and vanilla extract, and mix until well combined.
  4. Stir in the baking soda and gluten free oats until fully incorporated.
  5. Fold in the chocolate chips and M&M’s if using.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Store cookies in an airtight container for up to a week.
  • For a nut-free version, substitute peanut butter with sunflower seed butter.
  • Feel free to add your favorite mix-ins like nuts or dried fruit.
