  • 1 cup gluten-free graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/4 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix gluten-free graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
  3. Press the mixture into the bottom of a muffin tin lined with cupcake liners.
  4. In a separate bowl, beat the cream cheese until smooth.
  5. Add 1 cup sugar and vanilla extract, mixing until well combined.
  6. Add eggs one at a time, mixing well after each addition.
  7. Stir in sour cream until smooth.
  8. Pour the cream cheese mixture over the crust in the muffin tin.
  9. Bake for 20-25 minutes or until set.
  10. Let cool and refrigerate for at least 2 hours before serving.

Notes

  • Make sure all ingredients are gluten-free.
  • These can be topped with fresh fruit or chocolate sauce for added flavor.
