- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the taco seasoning, black beans, corn, diced tomatoes, and cooked quinoa to the skillet. Stir to combine.
- Season with salt and pepper to taste.
- Transfer the mixture to a greased casserole dish.
- Top with shredded cheddar cheese and chopped green onions.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
