  • 4 boneless, skinless chicken breasts
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix gluten-free breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  3. Dip each chicken breast in the beaten eggs, then coat with the breadcrumb mixture.
  4. Heat olive oil in a skillet over medium heat.
  5. Sear each chicken breast for 3-4 minutes on each side until golden brown.
  6. Transfer the chicken breasts to a baking dish and bake for 20-25 minutes until cooked through.
