A refreshing and healthy salad packed with Mediterranean flavors, perfect for a light meal or a side dish.

Ingredients

  • 1 can of tuna, drained
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cucumber, diced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 2 tablespoons capers, rinsed
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the drained tuna, cherry tomatoes, red onion, cucumber, olives, capers, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
