A refreshing and nutritious quinoa bowl packed with Mediterranean flavors, perfect for a gluten-free diet.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup hummus
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and water; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, olives, and parsley.
  6. Add the cooled quinoa to the vegetable mixture.
  7. Drizzle with olive oil and lemon juice; season with salt and pepper.
  8. Toss gently to combine.
  9. Serve topped with hummus and feta cheese if desired.
