- Rinse the quinoa under cold water.
- In a saucepan, combine quinoa and water; bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, olives, and parsley.
- Add the cooled quinoa to the vegetable mixture.
- Drizzle with olive oil and lemon juice; season with salt and pepper.
- Toss gently to combine.
- Serve topped with hummus and feta cheese if desired.
