- In a bowl, mix olive oil, lemon juice, dill, salt, and pepper.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Grill or pan-sear the chicken until fully cooked, about 6-7 minutes per side.
- While the chicken is cooking, prepare the salad by combining cherry tomatoes, cucumber, and red onion in a bowl.
- Once the chicken is cooked, slice it and serve it over a bed of quinoa topped with the salad mixture.
- Sprinkle feta cheese on top if desired.
