- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the chicken thighs, artichoke hearts, olives, lemon juice, lemon zest, garlic, olive oil, oregano, salt, and pepper.
- Toss everything together until the chicken is well coated.
- Transfer the mixture to a baking dish and spread it out evenly.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let it rest for a few minutes before serving.
