A delicious and healthy gluten-free recipe featuring tender chicken, artichokes, and olives, all infused with zesty lemon.

Ingredients

  • 4 chicken thighs
  • 2 cups artichoke hearts, drained
  • 1 cup green olives, pitted
  • 1 lemon, juiced and zested
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the chicken thighs, artichoke hearts, olives, lemon juice, lemon zest, garlic, olive oil, oregano, salt, and pepper.
  3. Toss everything together until the chicken is well coated.
  4. Transfer the mixture to a baking dish and spread it out evenly.
  5. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. Remove from the oven and let it rest for a few minutes before serving.
