A delicious and healthy gluten-free Mediterranean bowl featuring flavorful turkey meatballs.

Ingredients

  • 1 lb ground turkey
  • 1/2 cup cooked quinoa
  • 1/4 cup chopped parsley
  • 1/4 cup chopped red onion
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup feta cheese (optional)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup olives, sliced
  • 2 tbsp olive oil
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, cooked quinoa, parsley, red onion, garlic, oregano, salt, and pepper. Mix well.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 20-25 minutes or until cooked through.
  5. In a separate bowl, combine cherry tomatoes, cucumber, olives, olive oil, and lemon juice. Toss to combine.
  6. Serve the meatballs over the vegetable mixture and top with feta cheese if desired.

Notes

  • For a spicier kick, add red pepper flakes to the meatball mixture.
  • Can substitute ground turkey with ground chicken or beef.
