- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground turkey, cooked quinoa, parsley, red onion, garlic, oregano, salt, and pepper. Mix well.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake for 20-25 minutes or until cooked through.
- In a separate bowl, combine cherry tomatoes, cucumber, olives, olive oil, and lemon juice. Toss to combine.
- Serve the meatballs over the vegetable mixture and top with feta cheese if desired.
