  • 1 tablespoon matcha powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons lavender syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the gluten-free flour, matcha powder, baking soda, and salt.
  3. In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. While the cookies cool, prepare the lavender frosting by mixing powdered sugar with lavender syrup until smooth.
  9. Once the cookies are completely cool, frost them with the lavender frosting.
