- Preheat your oven to 375°F (190°C).
- In a bowl, mix the gluten-free breadcrumbs, grated pecorino cheese, lemon zest, salt, and pepper.
- Drizzle olive oil over the chicken breasts and rub it in.
- Press the breadcrumb mixture onto the chicken breasts to coat them evenly.
- Place the coated chicken breasts on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the crust is golden brown.
- Drizzle with lemon juice before serving.
