Delicious and easy-to-make gluten-free lemon oatmeal crumble bars, perfect for summer baking and as a light dessert.

Ingredients

  • 1 cup gluten-free oats
  • 1 cup almond flour
  • 1/2 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a mixing bowl, combine the gluten-free oats, almond flour, melted coconut oil, honey or maple syrup, lemon juice, lemon zest, baking powder, and salt.
  3. Mix until well combined and crumbly.
  4. Press half of the mixture into the bottom of the prepared baking dish to form the crust.
  5. Spread the remaining mixture on top to create a crumble layer.
  6. Bake for 25-30 minutes or until golden brown.
  7. Allow to cool before cutting into bars.
