- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, combine the gluten-free oats, almond flour, melted coconut oil, honey or maple syrup, lemon juice, lemon zest, baking powder, and salt.
- Mix until well combined and crumbly.
- Press half of the mixture into the bottom of the prepared baking dish to form the crust.
- Spread the remaining mixture on top to create a crumble layer.
- Bake for 25-30 minutes or until golden brown.
- Allow to cool before cutting into bars.
