Delicious and refreshing gluten-free dessert bars made with fresh figs and cream cheese, perfect for spring.

Ingredients

  • 1 cup gluten-free flour
  • 1/2 cup cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup lemon juice
  • 1/2 cup fresh figs, chopped
  • 1/4 cup butter, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine the gluten-free flour, baking powder, and salt.
  3. In another bowl, beat together the cream cheese, sugar, and melted butter until smooth.
  4. Add the eggs, lemon juice, and vanilla extract to the cream cheese mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Fold in the chopped figs gently.
  7. Pour the batter into the prepared baking dish and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool before cutting into bars.
